Fish and Seafood Recipes - Grilled Cod Steaks with Mint Pesto Recipe

Ingredients

Serve 4

  • 4 x 175 g/6 oz cod steaks

  • 1 lime, cut into wedges, to garnish

  • steamed green vegetables, to serve 

Mint pesto:

  • 6 tablespoons chopped mint

  • 1 tablespoon chopped parsley

  • 1 garlic clove, crushed and chopped

  • I tablespoon freshly grated Parmesan cheese

  • 1 tablespoon double cream

  • 1 teaspoon balsamic vinegar

  • 3 tablespoons extra virgin olive oil

  • sea salt and pepper


Method:

  1. Heat a griddle pan or nonstick frying pan. Put on the cod steaks and cook for 4 minutes on each side, until slightly charred and firm to the touch.

  2. Place the pesto ingredients in a food processor or blender and process until smooth. Alternatively, pound the ingredients with a pestle and mortar.

  3. Serve the cod steaks with a spoonful of pesto and with seasonal steamed green vegetables. Garnish with lime wedges.
