Grilled Cod Steaks
with Mint Pesto Recipe

g/6 oz cod steaks
-
1 lime, cut into
wedges, to garnish
-
steamed green vegetables, to
serve
Mint pesto:
-
6 tablespoons
chopped mint
-
1 tablespoon
chopped parsley
-
1 garlic clove,
crushed and chopped
-
I tablespoon
freshly grated Parmesan cheese
-
1 tablespoon double cream
-
1 teaspoon balsamic
vinegar
-
3 tablespoons extra
virgin olive oil
-
sea salt and pepper
Method:
-
Heat a griddle pan or nonstick frying pan. Put on
the cod steaks and cook for 4 minutes on each side,
until slightly charred and firm to the touch.

Place
the pesto ingredients in a food processor or blender
and process until smooth. Alternatively, pound the
ingredients with a pestle and mortar.
-
Serve the cod
steaks with a spoonful of pesto and with seasonal
steamed green vegetables. Garnish with lime wedges.
