Monkfish with
Tomatoes and Garlic Recipe

4 x 175 g/6 oz monkfish steaks
3 tablespoons olive
oil
1 tablespoon
chopped oregano,
to
garnish
Marinade:
5 tablespoons olive
oil
2 tablespoons lemon
juice
1 tablespoon finely chopped
parsley
Tomato sauce:
2 tablespoons olive oil
4 garlic cloves, chopped
750 g/1 1/2 lb tomatoes, skinned and chopped
4 anchovy fillets,
chopped
salt and pepper
Method:
Wash the monkfish steaks under cold running water
and pat dry with kitchen paper. Put all the marinade
ingredients in a bowl and mix together well.
Add the
monkfish steaks to the marinade, turning them until
they are thoroughly coated and glistening with oil.
Cover the bowl and leave in a cool place to marinate
for at least 1 hour.
Heat the olive oil in a
large frying pan. Remove the fish steaks from the
marinade, add them to the pan and fry gently until
they are cooked and golden brown on both sides,
turning the fish once during cooking.
Remove the
steaks from the pan, transfer to a warmed serving
dish and keep warm. While the fish steaks are
cooking, make the tomato sauce.
Heat the olive oil
in a pan. Add the garlic and fry over a low heat
until just golden. Add the tomatoes and anchovies
and cook over a medium heat until the tomatoes are
reduced to a thick pulpy consistency.
Season to
taste with salt and pepper. Pour the sauce over the
fish and sprinkle with oregano, to garnish.
