Fish and Seafood Recipes - Seared Scallops with Basil and Balsamic Vinegar Recipe

Ingredients

Serve 4

  • 3 tablespoons olive oil

  • 16 large scallops, cleaned

  • 2 shallots, finely chopped

  • 4 tablespoons balsamic vinegar

  • large handful of basil leaves, torn

  • salt and pepper


Method:

  1. Heat the oil in a large frying pan over a high heat until it is just smoking.

  2. Add the scallops and cook for 2 minutes on one side. Turn them over and add the shallots. Cook for 1 minute, then reduce the heat.

  3. Add the balsamic vinegar and season to taste with salt and pepper. Turn the scallops to coat in the vinegar.

  4. Sprinkle the basil over the scallops, quickly mix and serve immediately.
