Seared Scallops
with Basil and Balsamic Vinegar Recipe

3 tablespoons olive oil

16 large scallops, cleaned
-
2 shallots, finely chopped
-
4 tablespoons balsamic vinegar
-
large handful of
basil leaves, torn

salt and pepper
Method:

Heat the oil in a
large frying pan over a high heat until it is just
smoking.

Add the scallops and cook for 2 minutes on
one side. Turn them over and add the shallots. Cook
for 1 minute, then reduce the heat.
-
Add the balsamic
vinegar and season to taste with salt and pepper.
Turn the scallops to coat in the vinegar.
-
Sprinkle the basil over the scallops, quickly mix
and serve immediately.
