Seared Skate Wings
with Caperberries Recipe
Ingredients
Serve

2 skate wings, weighing
-
300 g/10 oz each
-
1 teaspoon
olive oil
-
2 tablespoons capers, or caperberries with
their stalks, halved lengthways

1 tablespoon grated lemon rind
-
2 tablespoons lemon juice
-
salt and pepper
-
lemon wedges, to garnish
-
steamed ribbons of vegetables, to serve (optional)
Method:

Cut
the skate wings in half and pat dry. Brush each side
with a little oil.

Heat a griddle pan or nonstick
frying pan and sear the skate wings for 3 minutes on
each side. If the wings are thick, cook them for a
little longer.

Sprinkle the caperberries on top, together with the
lemon rind and juice and cook for a few more
seconds.

Season and serve garnished with lemon
wedges. Serve with steamed ribbons of vegetables, if
liked.
This dish looks
very attractive when garnished with chili flowers.
To make chili flowers, shred the chili lengthways
leaving 1
cm/1/2
inch attached
at the
stem end. Place
in iced water for about 1 hour to open.
