Fish and Seafood Recipes - Swordfish Steaks in White Wine and Tomatoes Recipe

Ingredients

Serve 4

  • 2 tablespoons olive oil

  • 1 red onion, chopped

  • 1 garlic clove, chopped

  • 2 celery sticks, chopped

  • 2 bay leaves

  • 4 tomatoes, skinned and chopped

  • 1 teaspoon sugar

  • 300 m/1/2 pint white wine

  • 2 tablespoons chopped oregano

  • 4 x 175g/6 oz swordfish steaks salt and pepper


Method:

  1. Heat the oil in a pan. Add the onion, garlic and celery and fry over a low heat for 5 minutes.

  2. Add the bay leaves, tomatoes, sugar, white wine and oregano, season to taste with salt and pepper, mix well and bring to a gentle simmer.

  3. Add the swordfish steaks and cook for 5 minutes, then turn them over and cook on the other side for a further 5 minutes.

  4. This dish can be served immediately, or in hot weather it is very good served at room temperature.
