Swordfish Steaks
in White Wine and Tomatoes Recipe

2 tablespoons olive
oil
-
1 red onion,
chopped
-
1 garlic clove,
chopped
-
2 celery sticks,
chopped
-
2 bay leaves
-
4
tomatoes,
skinned and chopped
-
1 teaspoon sugar
-
300 m/1/2 pint white
wine
-
2 tablespoons
chopped oregano
-
4 x 175g/6 oz swordfish steaks
salt and pepper
Method:
-
Heat the oil in a pan.
Add the onion, garlic and celery and fry over a low
heat for 5 minutes.

Add the bay leaves, tomatoes,
sugar, white wine and oregano, season to taste with
salt and pepper, mix well and bring to a gentle
simmer.

Add the swordfish steaks and cook for 5 minutes,
then turn them over and cook on the other side for a
further 5 minutes.
-
This dish can
be served immediately, or in hot weather it is very good
served at room temperature.
