Fish and Seafood Recipes - Trout with Parmesan and Basil Dressing Recipe

Ingredients

Serve 4

  • 4 tablespoons olive oil, plus extra for brushing

  • 4 x 200 g/7 oz trout fillets

  • large handful of basil leaves, roughly chopped

  • 1 garlic clove, chopped

  • 125 g/4 oz Parmesan cheese, freshly grated

  • salt and pepper


Method:

  1. Lightly brush a baking sheet with oil and place under a preheated very hot grill to heat up.

  2. Put the trout fillets on to the hot tray, sprinkle with salt and pepper and place under the grill for 5 minutes.

  3. Put the basil and garlic into a bowl. Work in the olive oil using a hand-held blender.

  4. Remove the fish from the grill and sprinkle with the grated Parmesan.

  5. Return to the grill and cook for a further 3-5 minutes until the Parmesan turns golden. Serve with the basil sauce drizzled over the golden trout fillets.
