Fish and Seafood Recipes - Tuna Livorno Style Recipe

Ingredients

Serve 4

  • 4 x 175 g/6 oz tuna steaks

  • 50 g/2 oz plain flour

  • 4 tablespoons olive oil

  • 1 small onion, finely chopped

  • 4 parsley sprigs, finely chopped

  • 125 ml/4fl oz dry white wine

  • 1 tablespoon capers, drained

  • 1 bay leaf, crumbled

  • 1/4 teaspoon ground cinnamon

  • salt and pepper

  • new potatoes and green salad, to serve


Method:

  1. Coat the tuna steaks in flour. Heat the oil in a heavy based pan, mix the onion and parsley together and add them to the pan. Sauté over a medium heat, stirring, until just golden, but not brown.

  2. Add the tuna steaks and cook for 2 minutes on each side. Season to taste with salt and pepper and pour over the wine.

  3. Leave until this has evaporated a little, then add the capers, crumbled bay leaf and cinnamon. Cover and cook for 15 minutes, adding water if needed.

  4. Serve the tuna steaks with the cooking juices poured over, accompanied by new potatoes and a green salad.
