Tuna with Spiced
Onion Relish Recipe

4 x 175 g/6 oz
tuna steaks
chili
powder, to taste
1 tablespoon ground coriander
2
tablespoons ground cumin
2
tablespoons grated fresh root ginger

tablespoons olive oil

lb large onions, sliced
4 garlic cloves, crushed
100 ml/3 1/2
fl
oz Fish Stock
salt and cayenne
pepper
Method:
Season the tuna sparingly with
chili powder. Cover
and leave in a cool place for 1 hour.
Meanwhile, heat a dry heavy-based flameproof
earthenware dish or frying pan. Add the coriander,
cumin and ginger and season with salt and cayenne
pepper, then dry-fry over a low heat for 30 seconds.
Add the oil to the pan and heat for 30 seconds, then
add the onions and garlic. Cover and cook gently for
about 45 minutes until the onions are golden and
very soft.
Add the stock to the pan and put the fish on the
onions, bring to simmering point and cook gently
until the fish flakes when tested with a fork.
Transfer the fish to a warmed serving dish with a
slotted spoon. Boil the mixture in the pan until
most of the liquid has evaporated, then add to the
fish on the dish and serve.
