Sardines with Tomatoes Relish Recipe

Marinade:
-
1 garlic clove
-
2
teaspoons coriander seeds, toasted
-
1 dried red chili,
deseeded and chopped
-
finely grated rind and juice of 1 lime
-
4 tablespoons
virgin olive oil
-
salt
Tomato
relish:
-
4 spring onions,
white part only, chopped
-
2 tablespoons lime
juice
-
250 g/8 oz well-flavored
tomatoes, skinned, deseeded and chopped
-
1/2 sun-dried tomato,
chopped
-
1/2 dried red chili,
deseeded and chopped
-
3
tablespoons
chopped coriander leaves
Method:
-
Wash the fish thoroughly, pat dry with kitchen paper
and place in a shallow non-metallic dish.

To
make the marinade, using a pestle and mortar pound
together the garlic, coriander seeds and chili with
a pinch of salt.
-
Add the lime rind and juice, then
gradually work in the oil. Pour over the sardines,
coat well with the mixture, then cover and leave for
about 1 hour, turning the sardines 2-3 times.

Process all the relish ingredients in a food
processor or blender.

Place the sardines on a
barbecue or under a hot grill and cook for 2-3
minutes on each side, basting with the marinade.

Serve the sardines with the relish and garnish with
coriander sprigs, if liked.
