Fish and Seafood Recipes - Tunisian Grilled Sardines with Tomatoes Relish Recipe

Ingredients

Serve 4

  • 16 fresh sardines, scaled, cleaned and gutted coriander sprigs, to garnish (optional) 

Marinade:

  • 1 garlic clove

  • 2 teaspoons coriander seeds, toasted

  • 1 dried red chili, deseeded and chopped

  • finely grated rind and juice of 1 lime

  • 4 tablespoons virgin olive oil

  • salt 

Tomato relish:

  • 4 spring onions, white part only, chopped

  • 2 tablespoons lime juice

  • 250 g/8 oz well-flavored tomatoes, skinned, deseeded and chopped

  • 1/2 sun-dried tomato, chopped

  • 1/2 dried red chili, deseeded and chopped

  • 3 tablespoons chopped coriander leaves


Method:

  1. Wash the fish thoroughly, pat dry with kitchen paper and place in a shallow non-metallic dish.

  2. To make the marinade, using a pestle and mortar pound together the garlic, coriander seeds and chili with a pinch of salt.

  3. Add the lime rind and juice, then gradually work in the oil. Pour over the sardines, coat well with the mixture, then cover and leave for about 1 hour, turning the sardines 2-3 times.

  4. Process all the relish ingredients in a food processor or blender.

  5. Place the sardines on a barbecue or under a hot grill and cook for 2-3 minutes on each side, basting with the marinade.

  6. Serve the sardines with the relish and garnish with coriander sprigs, if liked.
