Devilled Kidneys

Ingredients

25g/1oz/2 tbsp
butter

1 shallot, finely
chopped

2 garlic cloves,
finely copped

115g/1 1/2 cups
mushrooms, sliced

1.5ml/1/4 tsp
cayenne pepper

15ml/1 tbsp
Worcestershire sauce

8 lamb's kidneys,
halved and trimmed

30ml/2 tbsp
chopped fresh parsley
Serves 4
Method:

Melt
the butter in a frying pan, then add the shallots,
garlic and mushrooms and cook for about 5 minutes.

Stir
in the cayenne pepper and Worcestershire sauce and cook
for 1 minute more. Add the kidneys to the pan and cook
for 3-5 minutes on each side.

Sprinkle with chopped
parsley, divide among warm serving plates and serve
immediately.

Tips: If you prefer not to eat spicy food first
thing in the morning, omit the cayenne pepper. The
dish will be just as tasty but milder on the palate.
