Herrings in
Oatmeal with Bacon

50g/2oz/1/2
cup medium oatmeal

10ml/2 tsp mustard powder

4
herrings, about 225g/8oz each,
cleaned, boned, heads and tails removed

30ml/2 tbsp
sunflower oil
-
8
rindless bacon rashers (strips)

salt
and ground black pepper

lemon wedges, to serve
Method:

In a
shallow dish, combine the oatmeal and mustard powder and
season. Press the herrings in the mixture to coat.

Heat
the oil in a large frying pan and fry the bacon until
crisp. Drain on kitchen paper and keep hot.

Gently lay
the herrings into the pan. You may need to cook them in
two batches to avoid overcrowding the pan. Cook the fish
for 3-4 minutes on each side, until crisp and golden.

Using a fish slice (metal spatula), lift the herrings
from the pan and place on warmed serving plates with the
streaky bacon rashers.

Serve immediately with lemon
wedges for squeezing over.
Note:
Oily fish are an excellent source of
omega-3 fatty acids, which are essential for good
health. They make a delicious, sustaining breakfast to
take you through the day. For extra color and flavor,
serve with grilled tomatoes.
