Low Carbohydrate Breakfasts Recipes - Savory Scrambled Eggs Recipe

Ingredients

Serve 2

  • 2 slices wholegrain bread

  • 25g/1oz/2 tbsp butter

  • 2 eggs and 2 egg yolks, beaten

  • 60-90ml/4-6 tbsp semi-skimmed (low-fat) milk

  • salt and ground black pepper

  • anchovy fillets, cut into strips, and paprika, to garnish

  • anchovy paste, such as Gentleman's Relish, for spreading


Method:

  1. Toast the bread, then remove the crusts and cut the toast into triangles squares, if you like. Keep warm.

  2. Meanwhile, melt the butter in a pan over a very low heal.

  3. Pour the eggs and milk into the butter and stir in a little salt and pepper. Heat very gently, stirring constantly, until the mixture begins to thicken. Remove the pan from the heat and continue to stir until the mixture becomes very creamy.

  4. Place the toast on two plates and divide the eggs equally among them Garnish each portion with strips of anchovy fillet and a generous sprinkling of paprika.

  5. Serve immediately, with anchovy paste to spread on the toast.
