Soufflé Omelet

cup strawberries, hulled

3 eggs, separated

30ml/2 tbsp caster (superfine) sugar

45ml/3 tbsp
double (heavy)
cream, whipped

few drops of vanilla essence (extract)

25g/1oz/2
tbsp butter
Method:

Hull the strawberries and cut them in half. Set
aside. In a bowl, beat the egg yolks and sugar until
pale and fluffy, then fold in the cream and vanilla
essence.

Whisk the egg whites in a very large,
grease-free bowl until stiff, then carefully fold
into the yolks.

Melt the butter in an omelet pan.
When sizzling, pour in the egg mixture and cook
until set underneath, shaking occasionally. Spoon
on the strawberries and, tilting the pan, slide the
omelet so that it folds over.

Carefully slide
the omelet on to a warm serving plate. Cut the
omelet into three pieces, then transfer to three
warmed plates and serve immediately.
VARIATION :
Use any type of soft, non-starchy fruit in place of
the strawberries. Slices of peach, fresh berries or
a combination of several fruits will all work well.
