Lamb Steaks with Red Pepper Salsa

lamb steaks

15g/1/2 oz
fresh rosemary leaves

3
garlic cloves, 2 sliced and 1 finely chopped

90ml/6 tbsp olive oil
-
200g/7oz red (bell) peppers, roasted, peeled, seeded
and chopped

15ml/1 tbsp chopped chives
-
salt
and ground black pepper

lettuce and fresh flat leaf parsley, to garnish
Method:

Place the lamb steaks in a shallow dish in a single
layer and season with salt and ground black pepper.
Sprinkle the rosemary leaves and slices of garlic
over the meat, then drizzle over with 60ml/4tbsp of
the olive oil.

Cover the dish with clear film
(plastic wrap! and place in the refrigerator to
marinate until ready to cook. The steaks can be left
to marinate for up to 24 hours.

Grill (broil) the
marinated steaks over a hot barbecue or under a
pre-heated grill (broiler), if you prefer. Cook for
2-5 minutes on each side, depending on how well done
you want the meat.

While the lamb steaks are
cooking, quickly prepare the salsa. Place the
roasted red peppers, chopped garlic, chives and
remaining olive oil in a small bowl and stir well to
combine.

When the lamb steaks are cooked, serve them
immediately with the salsa, either spooned on to the
plate or served separately.

Garnish the steaks with
lettuce and sprigs of flat leaf parsley.
Note:
Delicious, juicy steaks are rich in B vitamins, zinc
and iron. Lamb steaks cut across the leg are
relatively lean so, when choosing lamb, they make a
healthier option.
