Grilled Sea Bass
with Fennel Recipe

1 sea bass,
weighing 1.8-2kg/4-4 1/2 lb

60ml/4
tbsp olive oil

10-15ml/2-3
tsp
fennel seeds

2 large fennel
bulbs, trimmed and thinly sliced (reserve any
fronds)

60ml/4
tbsp Pernod
-
salt and ground
black pepper
Method:

With a sharp knife, make 3-4 deep
cuts in both sides of the fish. Brush the fish
with olive oil and season with salt and plenty
of ground black pepper.

Sprinkle the fennel seeds in the
cavity and into the cuts on both sides of the
fish. Set aside while you cook the fennel.

Preheat the grill (broiler). Put
the slices of fennel in a flameproof dish or on
the grill rack and brush with a little olive
oil. Cook for 4 minutes on each side until just
tender. Transfer the fennel to a serving plate
and set aside while you grill (broil) the fish.

Place the fish on the grill rack
and position about 10-14cm/4-5in away from the
heat. Grill for
10-12
minutes on each side, brushing
with oil occasionally during cooking.

Transfer the fish to the serving
platter, placing it on top of the grilled
fennel. Sprinkle over any reserved fennel
fronds.

Heat the Pernod in a small pan,
ignite it and pour it, flaming, over the fish.
Serve immediately.
