Low Carbohydrate Salads Recipes - Citrus Chicken Salad Recipe

Ingredients

Serve 6

  • 6 skinless boneless chicken breast portions

  • 4 oranges

  • 5ml/1 tsp Dijon mustard

  • 15ml/3 tsp clear honey

  • 60ml/4 tbsp extra virgin olive oil

  • 300g/11 oz/2 1/2 cups finely shredded white cabbage

  • 300g/11 oz carrots, peeled and thinly sliced

  • 2 spring onions (scallions), thinly sliced

  • 2 celery sticks, cut into thin batons

  • 30ml/2 tbsp chopped fresh tarragon

  • 2 limes

  • salt and ground black pepper


Method:

  1. Place the chicken under a preheated grill (broiler! and cook for S minutes on each side, or until it is cooked through and golden brown. Leave to cool.

  2. Peel two of the oranges, cutting off all pith, then cut out the segments and set aside. Grate the rind and squeeze the juice from one of the remaining oranges and place in a bowl.

  3. Stir the mustard, 5ml/1 tsp of the honey, the oil and seasoning into the orange juice. Mix in the cabbage, carrots, spring onions and celery, then leave to stand for 10 minutes.

  4. Meanwhile, squeeze the juice from the remaining orange and mix it with the remaining honey and tarragon. Peel and segment the limes and lightly mix the segments into the dressing with the reserved orange segments and seasoning to taste.

  5. Slice the chicken and stir into the dressing with the oranges and limes. Divide the vegetables among six plates, add the chicken, then serve.
