Low Carbohydrate Salads Recipes - Crab Salad with Capers Recipe

Ingredients

Serve 4

  • white and brown meat from 4 small fresh dressed crabs, about 450g/1 lb

  • 1 small red (bell) pepper, seeded and finely chopped

  • 1 small red onion, finely chopped

  • 30ml/2 tbsp drained capers

  • 30ml/2 tbsp chopped fresh coriander (cilantro)

  • grated rind and juice of 2 lemons

  • Tabasco sauce

  • 40g/1 1/2oz rocket (arugula) leaves

  • 30ml/2 tbsp sunflower oil

  • 15ml/1 tbsp fresh lime juice

  • salt and ground black pepper

  • lemon rind strips, to garnish


Method:

  1. Put the crab meat, red pepper, onion, capers and coriander in a bowl.

  2. Add the lemon rind and juice and toss gently to mix.

  3. Season to taste with Tabasco sauce, salt and ground black pepper.

  4. Wash the rocket leaves and pat dry Divide among four plates.

  5. Mix the oil and lime juice in a small bowl. Dress the leaves, then pile the crab salad on top and serve garnished with strips of lemon.
