Greek Salad Recipe
Ingredients

1 small cos or romaine
lettuce, sliced

450g/1 lb well-flavored tomatoes, cut into eighths

1 cucumber, seeded and
chopped

200g/7oz feta cheese,
crumbled

4 spring onions (scallions),
sliced

50g/2oz/1/2 cup black olives,
pitted and halved
For the dressing:
Method:

Put the lettuce, tomatoes,
cucumber, crumbled feta cheese, spring onions
and olives in a large salad bowl.

For the dressing, whisk together
the olive oil and lemon juice, then season. Pour
over the salad, toss well and serve.
Note:
This wonderfully Tangy makes a perfect lunch or
supper dish. The combination of fresh tomatoes,
cucumber, lettuce, olives, cheese and lemon juice
offer a range of nutrients from vitamins C and E to
monounsaturated fats and protein.
