Low Carbohydrate Salads Recipes - Greek Salad Recipe

Ingredients

Serve 4

  • 1 small cos or romaine lettuce, sliced

  • 450g/1 lb well-flavored tomatoes, cut into eighths

  • 1 cucumber, seeded and chopped

  • 200g/7oz feta cheese, crumbled

  • 4 spring onions (scallions), sliced

  • 50g/2oz/1/2 cup black olives, pitted and halved

For the dressing:

  • 45ml/3 tbsp olive oil

  • 25ml/1 1/2 tbsp lemon juice

  • salt and ground black pepper


Method:

  1. Put the lettuce, tomatoes, cucumber, crumbled feta cheese, spring onions and olives in a large salad bowl.

  2. For the dressing, whisk together the olive oil and lemon juice, then season. Pour over the salad, toss well and serve.

Note: This wonderfully Tangy makes a perfect lunch or supper dish. The combination of fresh tomatoes, cucumber, lettuce, olives, cheese and lemon juice offer a range of nutrients from vitamins C and E to monounsaturated fats and protein.
