Low Carbohydrate Salads Recipes - Salad Nicoise Recipe

Ingredients

Serve 4

  • 115g/4oz green beans, trimmed and halved

  • 115g/4oz mixed salad leaves

  • 1/2 small cucumber, thinly sliced

  • 4 ripe tomatoes, quartered

  • 1 tuna steak, weighing about 175g/6oz olive oil, for brushing

  • 50g/20z can anchovies, drained and halved lengthways

  • 4 eggs, hard-boiled, shelled and quartered

  • 1/2 bunch small radishes, trimmed

  • 50g/2oz/1/2 cup small black olives

  • salt and ground black pepper 

For the dressing:

  • 90ml/6 tbsp extra virgin olive oil

  • 2 garlic cloves, crushed

  • 15ml/1 tbsp white wine vinegar


Method:

  1. To make the dressing, whisk all the ingredients together and season to taste.

  2. Cook the beans in boiling water for 2 minutes, until just tender, then drain. In a large shallow bowl, combine the salad leaves, sliced cucumber, tomatoes and beans.

  3. Preheat the grill (broiler). Brush the tuna with olive oil and season. Grill (broil) for 3-4 minutes on each side until cooked through. Leave to cool, then flake.

  4. Sprinkle the flaked tuna, anchovies, quartered eggs, radishes and olives over the salad. Pour over the dressing and toss lightly to combine, then serve.
