Broccoli with
Garlic

Method:

Using a sharp knife, trim off and discard the thick
stems from the broccoli, and cut the head into
large, even-size florets.

Bring a large pan of water
to the boil. Add the broccoli florets and cook for
about 3 minutes, until just tender but still
retaining its bite.

Drain the broccoli well and
arrange the florets in a warmed serving dish.

Heat
the sunflower oil in a small pan, add the crushed
garlic and cook for about 2 minutes, being careful
not to let it burn, then remove the garlic with a
slotted spoon and discard.

Pour the garlic-flavored
oil over the broccoli. Sprinkle with fried garlic
slices, if using, and serve
immediately.
VARIATION : Use any other steamed or boiled green
vegetable such as pak choi (bok choy) or spinach in
place of the broccoli.
Note:
This vegetable is high
in vitamins and minerals, notably iron and foliates.
Amazingly, it is an even better source of vitamin C
than oranges.
