cauliflower and broccoli

finely grated rind of 1/2 lemon

large garlic clove, crushed

25g/1 oz/1/2 cup
wholegrain
breadcrumbs, lightly baked or grilled (broiled) until crisp

eggs, hard-boiled and shelled

salt and ground black
pepper
Method:

Trim
the cauliflower and broccoli, break
into florets and place in a steamer over a pan of
boiling water and steam for about 12 minutes.

If you
prefer, boil the vegetables in salted water for 5-7
minutes, until just tender. Drain the vegetables
well and transfer to a warmed serving dish.

While
the vegetables are cooking, make the topping. In a
bowl, combine the lemon rind, garlic and
breadcrumbs.

Finely chop the eggs and mix into the
breadcrumb mixture. Season with salt and black
pepper to taste, then sprinkle the chopped egg
mixture over the cooked vegetables and serve.
VARIATIONS :
Sprinkle the egg topping over other steamed vegetables such
as courgettes (zucchini) or spring greens [collards). STEAMED
VEGETABLES
are a delicious and extremely healthy accompaniment
for any main meal. If you want to reduce the
carbohydrate content further, omit the breadcrumbs.
