Fried Spring

15ml/1 tbsp
olive oil

75g/3oz
rindless smoked streaky (fatty)
bacon, chopped

large onion, thinly sliced

garlic cloves, finely chopped

900g/2lb spring greens
(collards), shredded

salt
and ground black pepper
Method:

In a large frying pan, heat the oil and add the
bacon. Fry for 2 minutes, then add the onions and
garlic and fry for 3 minutes more until the onion
begins to soften.

Reduce the heat and add the spring
greens and season. Cook, covered, over a gentle heat
for about 15 minutes until the greens are tender.
Serve immediately.
VARIATION :
Use shredded red cabbage in place of the spring
greens. Leave to simmer for 10 minutes longer is red
cabbage is tougher and requires longer cooking.
