Low Carbohydrate Side-Dishes Recipes - Fried Spring Greens Recipe

Ingredients

Serve 4

  • 15ml/1 tbsp olive oil

  • 75g/3oz rindless smoked streaky (fatty) bacon, chopped

  • 1 large onion, thinly sliced

  • 2 garlic cloves, finely chopped

  • 900g/2lb spring greens (collards), shredded

  • salt and ground black pepper


Method:

  1. In a large frying pan, heat the oil and add the bacon. Fry for 2 minutes, then add the onions and garlic and fry for 3 minutes more until the onion begins to soften.

  2. Reduce the heat and add the spring greens and season. Cook, covered, over a gentle heat for about 15 minutes until the greens are tender. Serve immediately.

VARIATION : Use shredded red cabbage in place of the spring greens. Leave to simmer for 10 minutes longer is red cabbage is tougher and requires longer cooking.
