Okra with
Coriander and Tomatoes

450g/1lb
tomatoes or 400g/14oz can chopped
tomatoes

450g/1 lb fresh okra
-
45ml/3 tbsp olive oil
-
2 onions, thinly
sliced
-
10ml/2 tsp coriander
seeds, crushed

3 garlic cloves, crushed
-
finely grated rind
and juice of 1 lemon

salt and ground black
pepper
Method:
-
1f using fresh tomatoes, cut a cross in the stalk
ends, plunge them into boiling water for about 30
seconds, then refresh in cold water. Peel off the
skins and chop the flesh, discarding the tough core.

Trim off any stalks from the okra and discard,
leaving the okra whole. Heat the olive oil in a
frying pan and cook the onions and coriander seeds
for 3-4 minutes, or until just beginning to color.

Add the okra and garlic to the pan and cook for 1
minute. Stir in the tomatoes and simmer gently for
20 minutes until the okra is tender.

Stir in the
lemon rind and juice and add seasoning. Serve warm
or cold.
Note: This
Aromatic Dish
is delicious hot or cold and makes a good
accompaniment at any time of the year. It is rich in
valuable nutrients including vitamins C and E and
potassium.
