Roasted Plum
Tomatoes and Garlic

8 plum tomatoes, halved

garlic cloves

60ml/4 tbsp extra virgin olive oil

3 bay leaves

salt
and ground black pepper

fresh oregano leaves, to
garnish
Method:

Preheat the oven to 230°C/450°F/Gas 8. Select an
ovenproof dish that will hold all the tomatoes
snugly in a single layer.

Arrange the halved
tomatoes in the dish and push the whole, unpeeled
garlic cloves between them. Brush the tomatoes with
the oil, add the bay leaves and sprinkle with
pepper.

Bake for 45 minutes until the tomatoes have
softened and are sizzling in the dish. They should
be charred around the edges.

Season with salt and a
little more black pepper, if needed. Garnish with
oregano and serve.
Note: This dish is actually very low in carbohydrate and
makes a healthy and nutritious accompaniment to
grilled fish, poultry or meat.
