Garlic Prawns

Method:

Remove the heads and shells from the prawns, leaving the
tails intact. Remove the dark vein along the back of the
prawns with a sharp knife or a pin.

Halve each chili lengthways and
discard the seeds. Heat the oil in a heatproof
pan, suitable for serving.

Add the prawns, chilies and
garlic to the pan and cook over a high heat for 3 minutes, stirring constantly until the prawns
turn
pink. Season and serve immediately.
Variation:
To add extra spice,
stir
10ml/2 tsp
finely chopped fresh root ginger into the pan with the
chilies and garlic.
To make a light lunch, serve the prawns on a bed of
colorful mixed salad leaves and fresh herbs, such as
coriander (cilantro) or mint.
For a special occasion, use lobster tails or crawfish
instead of prawns.
Note:
This wonderful but simple dish with its aroma of garlic
and hint of chili only takes minutes to cook, so it is
perfect for entertaining. Serve it for a dinner party,
and your guests will never guess that you are following
a diet.
