Red Clam Sauce and Linguine
Ingredients

1 clove garlic,
minced
-
2 Tbs. olive oil
-
2 6 1/2-oz. cans minced
clams, drained
-
1 6-oz. can Tomato Paste
-
1 cup water
-
2 Tbs. lemon juice
-
1 Tbs. chopped fresh
parsley
-
1 tsp. sugar
-
1/4tsp. rosemary
-
1/4 tsp. ground
thyme
-
8 oz. linguine or
spaghetti, cooked and drained
-
Grated Parmesan
cheese (optional)
Makes 4 servings
Method:
-
Sauté onion and garlic in oil in skillet. Add clams and
their juice, Tomato Paste, water, lemon juice,
parsley, sugar, rosemary and thyme.
-
Simmer, uncovered,
15 minutes. Serve over cooked linguine; sprinkle with
parmesan, if desired.
