Main Dish Recipes - Red Clam Sauce and Linguine

Ingredients      

  • 1 clove garlic, minced

  • 2 Tbs. olive oil

  • 2 6 1/2-oz. cans minced clams, drained

  • 1 6-oz. can Tomato Paste

  • 1 cup water

  • 2 Tbs. lemon juice

  • 1 Tbs. chopped fresh parsley

  • 1 tsp. sugar

  • 1/4tsp. rosemary

  • 1/4 tsp. ground thyme

  • 8 oz. linguine or spaghetti, cooked and drained

  • Grated Parmesan cheese (optional)

Makes 4 servings


Method:

  1. Sauté onion and garlic in oil in skillet. Add clams and their juice, Tomato Paste, water, lemon juice, parsley, sugar, rosemary and thyme.

  2. Simmer, uncovered, 15 minutes. Serve over cooked linguine; sprinkle with parmesan, if desired.
