Main Dish Recipes - Slimmed-Down Pasta Sauce

Ingredients     

  • 1 24-oz. can tomato juice

  • 1 6-oz. can tomato paste

  • 1/2 cup grated carrot

  • 2 large cloves garlic, mashed

  • 1 tsp. oregano leaves, crushed

  • 1 tsp. onion salt

  • 1 medium bay leaf

  • Dash pepper

Makes 4 2/3 cups sauce


Method:

  1. To make basic sauce, combine all ingredients in saucepan.

  2. Simmer 30 minutes, stirring occasionally. Remove bay leaf.

Ground Beef: In saucepan brown 1/2 lb. lean ground beef (10% fat); add basic sauce ingredients and proceed as  directed.

Mushroom: Add 1 cup sliced fresh mushrooms, or a 4-oz. can sliced mushrooms (with liquid) to basic sauce ingredients; proceed as directed.
