Slimmed-Down Pasta Sauce
Ingredients

1 24-oz. can tomato
juice

1 6-oz. can tomato
paste
-
1/2 cup grated carrot

2 large cloves
garlic, mashed

1 tsp. oregano
leaves, crushed

1 tsp. onion
salt

1 medium bay leaf

Dash pepper
Makes 4 2/3 cups sauce
Method:

To make basic sauce,
combine all ingredients in saucepan.

Simmer 30
minutes, stirring occasionally. Remove bay leaf.
Ground Beef: In
saucepan brown 1/2 lb. lean ground beef (10% fat); add basic sauce
ingredients and proceed as directed.
Mushroom: Add 1 cup sliced fresh
mushrooms, or a 4-oz. can sliced mushrooms (with
liquid) to basic sauce ingredients; proceed as directed.
