Main Dish Recipes - Tuna Creole in Rice Ring

Ingredients      

  • 1 green pepper, chopped

  • 1/2 cup chopped onion              

  • 1/2 cup sliced celery                  

  • 1 clove garlic, crushed                  

  • 2 Tbs. pure vegetable oil           

  • 1 6-oz. can Tomato Paste

  • 1 1/4 cups water     

  • 1 tsp. salt

  • 1 tsp. dill weed   

  • 1 bay leaf 

  • Dash Tabasco

  • 2 6 1/2 to 7-oz. cans chunk style tuna, drained and flaked

  • 4 cups hot cooked rice

Makes 4 servings


Method:

  1. Sauté vegetables and garlic until tender in oil. Add Tomato Paste, water and seasonings.

  2. Simmer 30 minutes, stirring occasionally. Stir in tuna; heat through.

  3. Pack hot cooked rice in buttered ring mold, turn out onto serving platter. Spoon tuna creole into center.
