Main Dish Recipes - Tuna Croquettes

Ingredients      

  • 3 Tbs. Crisco

  • 1/4 cup flour

  • 2/3 cup milk

  • 2 Tbs. finely chopped onion

  • 1 Tbs. snipped parsley

  • 2 tsps. lemon juice

  • 1/4 tsp. salt

  • Dash pepper

  • Dash paprika

  • 2 6 1/2 or 7-oz. cans tuna, drained and flaked

  • 2/3 cup fine dry bread crumbs

  • 1 egg, beaten

  • 1 8-oz. package frozen peas with cream sauce

  • Crisco for deep frying

Makes 4 servings


Method:

  1. In saucepan, melt the 3 Tbs. Crisco. Blend in the flour. Add the milk. Cook and stir till thickened and bubbly.

  2. Add the onion. parsley, lemon juice. salt. pepper and paprika; stir in the tuna. Cover and chill thoroughly about 3 hours.

  3. With wet hands, shape tuna mixture into 8 cones. using about 14 cup for each. Roll in crumbs. Dip into a mixture of beaten egg and 2 Tbs. water; roll in crumbs again.

  4. Prepare peas with cream sauce according to package directions; keep hot.

  5. Meanwhile, fry a few croquettes at a time till brown and hot in deep Crisco heated to 350°F, about 3 minutes. Drain on paper toweling. Spoon pea sauce over croquettes.
