Main Dish Recipes - Veal Scaloppine al Marsala

Ingredients  

  • 4 veal scallops (about 1 lb., cut from leg, each about 1/8 inch thick)

  • Salt

  • Pepper

  • 3 Tbs. butter or margarine

  • 1 clove garlic, crushed

  • 1 Tbs. butter or margarine

  • 1/2 lb. mushrooms, sliced

  • 1/2 cup Holland House Marsala Cooking Wine

Serves 2 to 3


Method:

  1. Dredge veal in flour and add salt and pepper to taste. Melt 3 Tbs. butter or margarine in skillet; brown garlic. Then add veal, browning quickly.

  2. Remove veal to shallow baking pan. Add 1 Tbs. butter to skillet and brown mushrooms.

  3. Add Holland House Marsala Cooking Wine and bring to boil. Simmer approximately 2 minutes to blend flavors.

  4. Pour wine-mushroom sauce over veal. Cover pan and bake approximately 20 minutes at 350°F.
