Main Dish Recipes - Vegetable Nut Pie

Ingredients      

  • 1 9-inch pastry shell, unbaked

  • 2 Tbs.  Margarine

  • 1 cup chopped onion

  • 1/2 cup chopped red bell pepper

  • 4 cups coarsely chopped fresh spinach

  • 3/4 cup chopped Planters Pecan Pieces or Planters Pecan Chips

  • 1 1/4 cups grated Swiss cheese

  • 1 1/4 cups half-and-half

  • 3 eggs

  • 3/4 tsp. salt

  • 1/8 tsp. ground black pepper

Makes 1 pie


Method:

  1. Pre-bake pastry shell at 425°F for 10 minutes.

  2. Melt Margarine in a large skillet over medium heat. Add onion and red pepper; sauté until nearly tender. Stir in spinach and sauté until wilted.

  3. Sprinkle Planters Pecan Pieces or Planters Pecan Chips and cheese in bottom of pastry shell; spread spinach mixture over cheese layer.

  4. Beat together half-and-half, eggs, salt and pepper; pour into pie shell.

  5. Bake at 350°F for 35 minutes, or until puffy and a knife inserted in center comes out clean. Do not over bake. Slice and serve hot.
