Pork with Mozzarella
and Sage Recipe
Ingredients

225g/8 oz pork tenderloin
-
1 garlic clove, crushed
-
75g/3 oz mozzarella, cut into 6 slices

6 slices Parma ham
-
6 large sage leaves
-
25g/1 oz butter
-
salt and ground black pepper
-
potato wedges roasted in olive and green beans,
to serve
Serves 2-3
Method:

Trim any excess fat from the pork, then cut the pork
crossways into six pieces about 2.5cm.

Stand each piece of the tenderloin on its end and
bat down with salt and pepper. Lay a slice of Parma
ham on top of each, crinkling it a little to fit.

Press a sage leaf on to each and secure with a
cocktail stick. Melt the butter in a large
heavy-based frying pan and cook the pork for about 2
minutes on each side until you see the mozzarella
melting.

Remove the cocktail sticks and serve
immediately with roasted potatoes and green beans.
