Ruby Bacon Chops Recipe

 

Ingredients

  • 1 ruby grapefruit

  • 4 lean bacon loin chops

  • 45ml/3 tbsp redcurrant jelly

  • ground black pepper

Serves 4


Method:

  1. Using a sharp knife, cut away all the peel and pith from the grapefruit. Carefully remove the segments, catching the juice in a bowl.

  2. Fry the bacon chops in a non-stick frying pan without fat, turning them once, until golden.

  3. Add the reserved grapefruit juice and redcurrant jelly to the pan and stir until melted.

  4. Add the grapefruit segments, then season with pepper and serve hot with fresh vegetables.
