Stir-fried Pork with Lychees Recipe

 

Ingredients

  • 450g/1 lb fatty pork, such as belly pork, with the skin on or off

  • 30ml/2 tbsp hoi-sin sauce

  • 4 spring onions, sliced diagonally

  • 175g/6 oz lychees, peeled, stoned and cut into slivers

  • salt and ground black pepper

  • fresh lychees and parsley sprigs, to garnish

Serves 4


Method:

  1. Cut the pork into bite-size pieces.

  2. Pour the hoi-sin sauce over the pork and stir-fry for 5 minutes until crisp and golden.

  3. Add the spring onions and stir-fry for a further 2 minutes.

  4. Scatter the lychees slivers over the pork, and season well with salt and pepper.

  5. Garnish with fresh lychees and fresh parsley sprigs, to serve.

Notes: Lychees heave a very pretty pink skin which, when peeled, reveals a soft fleshy berry with a hard shiny stone. If you cannot buy fresh lychees, this dish can be made with drained canned lychees.
