Meats Recipes Breaded Veal Escalope with Parma Ham and Parmesan Recipe

Ingredients

Serve 4

  • 4 x 175 g/6 oz veal escalope

  • 75 g/3 oz plain flour

  • 2 eggs, beaten

  • 175 g/6 oz fresh breadcrumbs

  • 75 g/3 oz butter

  • 50 g/2 oz Parma ham

  • 50 g/2 oz Parmesan cheese, freshly grated

  • salt and pepper

  • handful of flat leaf parsley, chopped, to garnish

  • 1 lemon, cut into 4 wedges, to serve


Method:

  1. Place the veal escalope between 2 sheets of grease proof paper and flatten them by pounding with a rolling pin or meat mallet.

  2. Season the flour with salt and pepper. Dip the escalope first in the flour, then in the egg and finally in the breadcrumbs, coating them evenly.

  3. Melt the butter in a large frying pan. When it is foaming, add the escalope and cook for 1-2 minutes on each side or until golden.

  4. Arrange the escalope on a grill pan. Put a piece of Parma ham on each one and sprinkle with the grated Parmesan.

  5. Place the escalope under a preheated very hot grill and cook for 4-5 minutes until the Parmesan is golden.

  6. Garnish the escalope with chopped parsley and serve with lemon wedges.
