Gammon Steaks with
Parsley Sauce Recipe
Ingredients

4 x 175 g/6 oz
smoked gammon steaks,
rinded
-
25 g/1 oz butter,
melted
-
parsley sprigs, to
garnish
Sauce:
-
150 ml/1/4 pint soured
cream
-
4 tablespoons chopped parsley
-
1 teaspoon
French mustard
-
salt and pepper
Method:
-
Snip the fat at 1 cm/1/2 inch
intervals
around the gammon
steaks. Brush the steaks on one side with butter.

Place
under a preheated moderate grill and cook for 5
minutes. Turn the steaks, brush with more butter and cook for a
further 3-5 minutes,
or until cooked through.

Transfer to a heated serving dish and
keep warm
in a low oven.

To
make the sauce, combine all the ingredients in a
small saucepan. Stir over a low heat until warmed
through, but do not allow it to boil.

Pour the sauce over the gammon steaks, garnish with
parsley sprigs and serve immediately.
