Meats Recipes Gammon Steaks with Parsley Sauce Recipe

Ingredients

Serve 4

  • 4 x 175 g/6 oz smoked gammon steaks, rinded

  • 25 g/1 oz butter, melted

  • parsley sprigs, to garnish 

Sauce:

  • 150 ml/1/4 pint soured cream

  • 4 tablespoons chopped parsley

  • 1 teaspoon French mustard

  • salt and pepper


Method:

  1. Snip the fat at 1 cm/1/2 inch intervals around the gammon steaks. Brush the steaks on one side with butter.

  2. Place under a preheated moderate grill and cook for 5 minutes. Turn the steaks, brush with more butter and cook for a further 3-5 minutes, or until cooked through.

  3. Transfer to a heated serving dish and keep warm in a low oven.

  4. To make the sauce, combine all the ingredients in a small saucepan. Stir over a low heat until warmed through, but do not allow it to boil.

  5. Pour the sauce over the gammon steaks, garnish with parsley sprigs and serve immediately.
