Meats Recipes Griddled Gammon with Apricot Salsa Recipe

Ingredients

Serve 4

  • 4 x 175 g/6 oz gammon steaks

Apricot salsa:

  • 250 g/8 oz fresh apricots, pitted and chopped

  • grated rind and juice of 1 lime

  • 2 teaspoons fresh root ginger, finely diced

  • 2 teaspoons clear honey

  • 1 tablespoon olive oil

  • 2 tablespoons chopped sage

  • 4 spring onions, chopped

  • sea salt and pepper


Method:

  1. Heat a griddle pan or nonstick frying pan. Add the gammon steaks, in batches, and cook for 4 minutes on each side. Keep warm until they are all cooked.

  2. Mix together the apricots, lime rind and juice, ginger, honey, olive oil and sage in a small bowl.

  3. Crush the mixture with the back of a fork. Add the spring onions and season to taste with salt and pepper, mixing well.

  4. Serve the steaks immediately with the apricot salsa.
