25 g/1 oz fresh white breadcrumbs, toasted
in the oven
until dry and golden brown
1 small onion, finely chopped
500 g/1
lb minced beef
125 g/4 oz white breadcrumbs
1 tablespoon tomato ketchup
1 teaspoon Worcestershire sauce
1 teaspoon crushed juniper berries
1 tablespoon finely chopped chives
1 tablespoon finely chopped parsley
1 teaspoon finely chopped oregano
1 egg, beaten
salt and pepper

Method:
Grease a 19 x 9 x 5.5
cm/7 1/2
x 3 1/4 x 2 1/4 inch loaf tin with half the butter and
dust with the browned breadcrumbs.
Heat the remaining
butter in a saucepan. Add the onion and fry until soft,
then add the beef and continue to cook until browning.
Stir in the remaining ingredients and pack tightly into
the prepared tin.
Cover the tin with foil and bake in a
preheated oven,
190°C
(375°F), Gas Mark 5, for
1-1 1/2
hours until firm to the touch. Leave to rest for 10-15
minutes before turning out.
Serve cut in slices either
hot or cold. Quick tomato sauce is a tasty
accompaniment.
