Method:
-
Mix the rosemary, olive oil and lemon rind and juice
in a shallow dish and season with salt and pepper.

Add the lamb cutlets and coat with the marinade.
Leave to marinate for 10 minutes.

Place the cutlets
on a grill pan, spoon over the marinade and cook
under a preheated very hot grill for 5 minutes on
each side.
