Meats Recipes Lamb Cutlets with Rosemary and Lemon Recipe

Ingredients

Serve 4

  • 1 rosemary sprig, finely chopped

  • 1 tablespoon olive oil

  • finely grated rind and juice of 1 lemon

  • 8 lamb cutlets

  • salt and pepper


Method:

  1. Mix the rosemary, olive oil and lemon rind and juice in a shallow dish and season with salt and pepper.

  2. Add the lamb cutlets and coat with the marinade. Leave to marinate for 10 minutes.

  3. Place the cutlets on a grill pan, spoon over the marinade and cook under a preheated very hot grill for 5 minutes on each side.
