Loin of Pork with
Citrus Fruit Recipe

50 g/2 oz butter
1 small onion,
finely chopped
1.25 kg/2 1/2 lb loin
of pork
4 1/2 teaspoons
Marsala wine
6 tablespoons
orange juice
4 tablespoons lemon
juice
125 ml/4 fl oz stock
12 black olives,
pitted and chopped
salt and pepper
roast or mashed
potatoes, to serve
Method:
Melt the butter in a large flameproof casserole over
a medium heat. Add the onion and fry until golden,
but not brown.
Add the loin of pork and brown it on
all sides. Add the Marsala and when it has
evaporated, add the orange and lemon juice.
Season
to taste with salt and pepper, cover and cook over a
low heat for about 1 1/2 hours.
Add a little stock
from time to time to make sure it does not dry out.
Halfway through the cooking time, add the olives to
the pork, together with a little more pepper.
Serve the pork thinly sliced with the cooking juices
poured over, accompanied with roast or mashed
potatoes.
