Meats Recipes Malabar Lamb Curry Recipe

Ingredients

Serve 4

  • 3 tablespoons oil or ghee

  • 2 onions, finely chopped

  • 1 teaspoon turmeric

  • 1 tablespoon ground coriander

  • 1 teaspoon ground cumin

  • 2 teaspoons chili powder

  • 1/2 teaspoon ground cloves

  • 12 curry leaves

  • 750 g/1 1/2 lb boned leg of lamb, cubed

  • 1 tablespoon coarsely grated coconut

  • 300 ml/1/2 pint water

  • 1 teaspoon salt


Method:

  1. Heat the oil or ghee in a saucepan. Add the onions and fry until golden.

  2. Stir in the turmeric. coriander, cumin, chili powder, cloves and curry leaves and fry for 1-2 minutes. Add the lamb and coconut and fry, stirring, until well browned.

  3. Pour in the water and add the salt. Cover and simmer for 45 minutes or until the lamb is tender.

  4. Transfer to a warmed serving dish and serve immediately.
