Ingredients
Serve

2 onions, quartered
-
8 dried red
chilies
-
6 macadamia nuts
-
1/2 teaspoon terasi
(dried shrimp paste)

2 tablespoons
vegetable oil
-
750 g/1 1/2 lb lean
pork, cut into 2.5 cm/1 inch cubes
-
250 ml/8 fl oz water
-
1 teaspoon salt
-
250 ml/8 fl oz thick coconut milk
-
1
tablespoon sugar
-
2 tablespoons lemon or lime juice
To garnish:
-
dried red
chili strips
-
fresh coconut slices
-
coriander sprigs
Method:
-
Put the onions,
chilies, macadamia nuts, terasi and
1 tablespoon water into a food processor or blender
and process to a paste.

Heat the oil in a large
saucepan. Add the spice paste and fry over a low
heat, stirring, for 3-4 minutes.

Add the pork and
cook, stirring, until it changes color and is well
coated with the paste.

Pour in the water and add the
salt. Cover and simmer gently for about 30 minutes
until the pork is just tender.

Add
the coconut milk and simmer, uncovered, for
10-15
minutes, stirring from time to time. Stir in the
sugar and lemon or lime juice.

To serve, spoon the curry into individual bowls and
garnish with dried chili strips, fresh coconut and
coriander sprigs.
