with Spicy Chili Sauce Recipe

1 kg/2 lb lean
pork spare ribs, cut into
5
cm/2 inch
pieces
-
2 tablespoons sunflower oil
-
2 dried red
chilies
-
2.5 cm/1 inch
piece of fresh root ginger, finely chopped
-
1 garlic clove,
thinly sliced
-
salt
Sauce:
-
4 tablespoons clear honey
-
4 tablespoons wine vinegar
-
2
tablespoons light soy sauce
-
2
tablespoons dry sherry
-
150 g/5 oz
tomato puree
-
1 teaspoon
chili
powder
-
2 garlic cloves, crushed
Method:

Mix all the sauce ingredients together and set aside. Sprinkle the spare
ribs with salt.

Heat the oil in a
preheated wok or frying pan. Add the red chilies
and fry for 30 seconds to flavor it. Remove the
chilies with a slotted spoon and discard.

Add the
ginger and garlic to the wok and stir-fry over a
moderate heat for 30 seconds.

Add the spare ribs and
stir-fry for 5 minutes, until golden brown. Reduce
the heat and cook gently for 10 minutes.

Add the sauce to the wok, cover and simmer gently
for 25-30 minutes. Serve hot.
