Meats Recipes Pork Spare Ribs with Spicy Chili Sauce Recipe

Ingredients

Serve 4

  • 1 kg/2 lb lean pork spare ribs, cut into 5 cm/2 inch pieces

  • 2 tablespoons sunflower oil

  • 2 dried red chilies

  • 2.5 cm/1 inch piece of fresh root ginger, finely chopped

  • 1 garlic clove, thinly sliced

  • salt 

Sauce:

  • 4 tablespoons clear honey

  • 4 tablespoons wine vinegar

  • 2 tablespoons light soy sauce

  • 2 tablespoons dry sherry

  • 150 g/5 oz tomato puree

  • 1 teaspoon chili powder

  • 2 garlic cloves, crushed


Method:

  1. Mix all the sauce ingredients together and set aside. Sprinkle the spare ribs with salt.

  2. Heat the oil in a preheated wok or frying pan. Add the red chilies and fry for 30 seconds to flavor it. Remove the chilies with a slotted spoon and discard.

  3. Add the ginger and garlic to the wok and stir-fry over a moderate heat for 30 seconds.

  4. Add the spare ribs and stir-fry for 5 minutes, until golden brown. Reduce the heat and cook gently for 10 minutes.

  5. Add the sauce to the wok, cover and simmer gently for 25-30 minutes. Serve hot.
