Heat a griddle pan or
nonstick frying pan. Place the sausages on the
griddle and cook for 10 minutes, turning to get an
even color.
Add the onion wedges and cook for 6-7
minutes with the sausages.
Meanwhile, place the potatoes in a saucepan of cold water, bring to the
boil and simmer for 15 minutes.
When the potatoes are
cooked, drain well and return to the pan. Place over
a low heat and allow any excess water to steam away,
without coloring the potatoes.
Remove from the heat
and peel. Then mash them well, add the butter,
mustards and garlic and season to taste with salt
and pepper.
Taste the potato and add more mustard if
liked. Finally, add the parsley and a dash of olive
oil and stir.
Serve the mash and sausages together with the
griddled onion wedges.
