Beat
the veal lightly with a mallet to flatten. Dip into the
beaten egg and coat with breadcrumbs.

Melt the
butter in a large frying pan. Add the veal and fry for
2-3 minutes on each side until tender and golden.

Transfer the cooked veal to a warmed serving dish and
sprinkle with salt and pepper to taste.

Garnish with
lemon twists and chopped parsley and serve immediately
with fresh green beans.
