Meats Recipes Scallopine alla Milanese Recipe

Ingredients

Serve 4

  • 4 x 125 g/4 oz veal escalope

  • 1-2 eggs, beaten

  • dried breadcrumbs, for coating

  • 75 g/3 oz butter

  • salt and pepper

  • green beans, to serve 

To garnish:

  • lemon twists parsley sprigs


Method:

  1. Beat the veal lightly with a mallet to flatten. Dip into the beaten egg and coat with breadcrumbs.

  2. Melt the butter in a large frying pan. Add the veal and fry for 2-3 minutes on each side until tender and golden.

  3. Transfer the cooked veal to a warmed serving dish and sprinkle with salt and pepper to taste.

  4. Garnish with lemon twists and chopped parsley and serve immediately with fresh green beans.
