Meats Recipes Spiced Beef with Leeks and Celery Recipe

Ingredients

Serve 4-6

  • 500 g/1 lb rump or sirloin steak

  • 2 leeks

  • 3 celery sticks

  • 6 tablespoons vegetable oil

  • 1 garlic clove, crushed with a pinch of salt

  • 1 teaspoon red wine vinegar

  • 1 teaspoon soy sauce

  • 1 tablespoon sesame oil

  • 1 tablespoon hot soy bean paste


Method:

  1. Cut the beef into small, thin slivers. Cut the leeks and celery into matchstick pieces.

  2. Heat 3 tablespoons of the oil in a preheated wok or large frying pan over a high heat.

  3. Add the leeks and celery, stir-fry for 1 minute and remove. Add the remaining oil to the pan.

  4. Add the steak and stir-fry until it has browned and all the moisture in the pan has evaporated.

  5. Stir in the garlic, vinegar, soy sauce, sesame oil and soy bean paste. Add the vegetables and stir-fry for 1 minute. Serve immediately.
