lb braising or stewing steak, thinly
sliced
1 teaspoon salt

ml/1/2
pint natural yogurt
175 g/6 oz ghee or
3 tablespoons vegetable oil
1 large
onion, sliced
3 garlic cloves, sliced
1 1/2 teaspoons ground ginger
2 teaspoons ground coriander
2 teaspoons
chili powder
1/2 teaspoon ground cumin
1 1/2 teaspoons turmeric
1 teaspoon
garam masala
boiled rice, to serve
Method:
Place
the beef between 2 sheets of grease proof paper
and beat until thin with a rolling pin or meat
mallet.
Rub the beef with the salt and then cut
into serving sized pieces.
Place
in a bowl and cover with the yogurt. Cover and
leave to marinate overnight in the refrigerator.
Heat the ghee or vegetable oil in a heavy-based
saucepan. Add the onion and garlic and fry over
a low heat for 4-5 minutes until soft.
Add the
spices and fry, stirring constantly, for a
further 3 minutes.
Add the beef and yogurt marinade to the pan and
stir well.
Cover the pan with a tightly-fitting
lid and then simmer for 1 1/2 hours, or
until the meat is tender. Serve with rice.
