Meats Recipes Spicy Beef in Yoghurt Recipe

Ingredients

Serve 4

  • 500 g/1 lb braising or stewing steak, thinly sliced

  • 1 teaspoon salt

  • 300 ml/1/2 pint natural yogurt

  • 175 g/6 oz ghee or 3 tablespoons vegetable oil

  • 1 large onion, sliced

  • 3 garlic cloves, sliced

  • 1 1/2 teaspoons ground ginger

  • 2 teaspoons ground coriander

  • 2 teaspoons chili powder

  • 1/2 teaspoon ground cumin

  • 1 1/2 teaspoons turmeric

  • 1 teaspoon garam masala

  • boiled rice, to serve


Method:

  1. Place the beef between 2 sheets of grease proof paper and beat until thin with a rolling pin or meat mallet.

  2. Rub the beef with the salt and then cut into serving sized pieces. Place in a bowl and cover with the yogurt. Cover and leave to marinate overnight in the refrigerator.

  3. Heat the ghee or vegetable oil in a heavy-based saucepan. Add the onion and garlic and fry over a low heat for 4-5 minutes until soft.

  4. Add the spices and fry, stirring constantly, for a further 3 minutes. Add the beef and yogurt marinade to the pan and stir well.

  5. Cover the pan with a tightly-fitting lid and then simmer for 1 1/2 hours, or until the meat is tender. Serve with rice.
