Meats Recipes Stir-fried Beef Recipe

Ingredients

Serve 4

  • 375 g/12 oz rump steak

  • 1 tablespoon light soy sauce

  • 1 tablespoon dark soy sauce

  • 1 tablespoon soft brown sugar

  • 1 teaspoon sesame oil

  • 1 tablespoon Chinese rice wine or dry sherry

  • 2 tablespoons white sesame seeds

  • 2 tablespoons sunflower oil

  • 1 garlic clove, thinly sliced

  • 2 celery sticks, diagonally sliced

  • 2 carrots, thinly sliced

  • 50 g/2 oz button mushrooms, sliced


Method:

  1. Cut the steak into thin slices across the grain and place in a shallow dish.

  2. Combine the soy sauces, sugar, sesame oil and wine or sherry. Pour over the meat, toss to coat well and leave to marinate for 15 minutes.

  3. Dry-fry the sesame seeds in a heavy-based pan until they are golden.

  4. Heat the oil in a preheated wok or frying pan. Add the garlic, celery and carrots and stir-fry briskly for 1 minute. Remove from the wok.

  5. Increase the heat, add the beef and stir-fry for about 3 minutes until well browned.

  6. Return the vegetables to the wok, add the mushrooms and cook for a further 30 seconds.

  7. Sprinkle with the toasted sesame seeds and serve at once.
