375 g/12 oz rump
steak
-
1
tablespoon light
soy sauce
-
1 tablespoon dark soy sauce
-
1 tablespoon soft brown sugar
-
1 teaspoon sesame oil
-
1 tablespoon Chinese rice wine or dry sherry
-
2 tablespoons white sesame seeds
-
2 tablespoons sunflower oil
-
1 garlic clove, thinly sliced
-
2 celery sticks, diagonally sliced
-
2 carrots, thinly sliced
-
50 g/2 oz button mushrooms, sliced
Method:

Cut the steak into thin slices across the grain
and place in a shallow dish.

Combine the soy
sauces, sugar, sesame oil and wine or sherry.
Pour over the meat, toss to coat well and leave
to marinate for 15 minutes.

Dry-fry the sesame
seeds in a heavy-based pan until they are
golden.

Heat the oil in a preheated wok or
frying pan. Add the garlic, celery and carrots
and stir-fry briskly for 1 minute. Remove from
the wok.

Increase the heat, add the beef and
stir-fry for about 3 minutes until well browned.

Return the vegetables to the wok, add the
mushrooms and cook for a further 30 seconds.

Sprinkle with the toasted sesame seeds and serve
at once.
