Stir-fried Pork
with Aubergine Recipe
Ingredients

175 g/6 oz boneless lean pork, shredded
2 spring onions, finely chopped
1 cm/1/2 inch piece of fresh root ginger, finely
chopped
1 garlic clove, finely chopped
1 tablespoon soy sauce
1 teaspoon medium or dry sherry
1 1/2 teaspoons corn flour
vegetable oil, for deep-frying
250 g/8 oz aubergine, cut into diamond-shaped chunks
1 tablespoon chilli sauce
3-4
tablespoons Chicken Stock or water chopped
spring onions, to garnish
Method:
Put the pork in a bowl
with the spring onions, ginger, garlic, soy sauce,
sherry and corn flour. Mix well, then
leave to marinate for about
20 minutes.
Heat the oil in a wok
or deep-fat fryer to 180-190°C (350-375°F) or until
a cube of bread browns in 30 seconds.
Lower the
heat, add the aubergine and deep-fry for about 1 1/2
minutes. Remove from the pan with a slotted spoon
and drain on kitchen paper.
Pour off all but 1
tablespoon of oil from the pan. Add the pork and
stir-fry for about 1 minute. Add the aubergine and
chili sauce and cook for about
1 1/2 minutes, then moisten with the stock or water.
Simmer until the liquid has almost evaporated. Serve
hot, garnished with chopped spring onions.
