Meats Recipes Thai Chili Pork Recipe

Ingredients

Serve 2

  • 10 small shallots

  • 25 g/1 oz large dried chilies, soaked for 20 minutes

  • 24 coriander roots

  • 6 tablespoons oil

  • 250 g/8 oz minced pork

  • 4 tomatoes, diced

  • 3 tablespoons sugar

  • 3 tablespoons Thai fish sauce

  • coriander leaves, to garnish

Salad:

  • 1/2 cucumber, cut into chunks

  • 1 little gem lettuce, separated into leaves

  • coriander sprigs


Method:

  1. Put the shallots, chilies and coriander roots into a food processor or blender and process, adding a little water if the mixture seems very dry.

  2. Alternatively, pound them together using a pestle and mortar for 5-8 minutes until thoroughly amalgamated.

  3. Heat the oil in a preheated wok or frying pan. Add the chili paste and stir-fry for 30 seconds.

  4. Add the pork and tomatoes and cook, stirring, for 30 seconds, then add the sugar and fish sauce and continue to cook, stirring, for 4-5 minutes.

  5. Turn the pork into a serving bowl, garnish with coriander and serve, with the salad arranged on a separate plate.
