10 small shallots
-
25 g/1 oz large
dried chilies, soaked for 20 minutes

24 coriander
roots
-
6 tablespoons oil
-
250 g/8 oz minced
pork
-
4 tomatoes, diced
-
3 tablespoons sugar
-
3 tablespoons Thai
fish sauce
-
coriander leaves,
to garnish
Salad:
-
1/2
cucumber,
cut into chunks
-
1 little gem
lettuce, separated into leaves

coriander sprigs
Method:
-
Put the shallots,
chilies and coriander roots into
a food processor or blender and process, adding a
little water if the mixture seems very dry.

Alternatively, pound them together using a pestle
and mortar for 5-8 minutes until thoroughly
amalgamated.

Heat the oil in a preheated wok or
frying pan. Add the chili paste and stir-fry for 30
seconds.

Add the pork and tomatoes and cook,
stirring, for 30 seconds, then add the sugar and
fish sauce and continue to cook, stirring, for 4-5
minutes.

Turn the pork into a serving bowl, garnish
with coriander and serve, with the salad arranged on
a separate plate.
